Dehydrated fruits are extremely nutritious. A dried fruit contains almost the same amount of nutrients as its original source, but in a much smaller size. Up to 3.5 times more fibres, vitamins and minerals are packed in 50 g of dried fruit compared ti 50 g of fresh fruit of the same kind. This makes dehydrated fruits a great source of much of the recommended daily intake of many vitamins and minerals, such as folic acid. There are some exceptions. For example, the amount of vitamin C in fruits decreases significantly when they are dried. On the other hand, only five medium-sized dried peaches contain the entire daily dose of iron needed to maintain haemoglobin and calcium levels. A fact that particularly affects people with sedentary lifestyles.
